Living here in Panama, I often find myself forgetting that other cuisines exist. It’s a little more difficult to find ingredients for Asian dishes than it is to find Latin ingredients, so a lot of what we eat now is Latin-inspired or muy Panameno.
However, I love Asian food and always have; since taking the wonderful Mai Kaidee’s vegetarian cooking course in Bangkok, I have loved both the tastes and textures of Thai food as well as the fact that most Thai dishes can be knocked up in 15 minutes!
Last night, inspired by a vegan Asian cookbook sent to me by someone awesome, I decided that we simply had to have a Thai curry. Even though I had to make the veg stock AND the curry paste from scratch, this meal for 4 was made in under 45 minutes. If you have the stock and the paste ready, this should take 15-20 minutes at the most!
3 tablespoons Red Thai Curry Paste (you can make your own with this recipe!)
1 white onion, sliced
3 carrots, cut in half then sliced
3 red peppers, sliced thinly
2 large heads of broccoli, chopped
1 cup of chopped pineapple
1 can coconut milk
2 cups vegetable stock
1/2 cup smooth peanut butter
2 tablespoons agave nectar (or honey if you’re not vegan)
3 tablespoons soy sauce
2 tablespoons fresh cilantro, chopped
4 tablespoons fresh basil, chopped
a pinch of salt
In a large pot or wok, heat a little coconut oil, then add in the curry paste and fry until fragrant
Add in the onion, carrots and red peppers, and fry for 2-3 minutes
In a bowl, combine the coconut milk, veg stock, peanut butter, agave, soy sauce and a pinch of salt
Add the sauce to the bowl and cook on a high heat for 5 minutes
Add in the broccoli, pineapple, basil and cilantro and cook for 5 minutes more
Serve with plain white or brown rice for an absolutely amazing Thai meal – and all in under 30 minutes!
