Sometimes, you just need a cookie. After an incredibly busy weekend and a tiring Monday, and with some friends coming over, I decided that Peanut Butter Oatmeal Cookies were exactly what everyone needed.
Here’s a secret about me: I actually suck at making cookies.
I don’t know what it is. I think we did cakes a lot when I was a kid, and though I can’t remember making many biscuits there were always things like flapjack and apple crumble in our fridge. Cookies still pose a bit of a challenge for me though, so when I finally come up with a recipe that’s foolproof, I keep it at the forefront of my mind!
This recipe is easy, delicious, chewy and gorgeous, and it takes less than half an hour to make. Kids will love it, and it’s full of protein! What else could you want?
(Makes 10-15 cookies)
1/2 cup peanut butter
1/4 cup coconut oil
1/4 cup almond milk
1 cup flour
1 cup oats
1/3 cup brown sugar
1/2 pinch baking soda
1/4 teaspoon cinnamon
pinch of salt
Preheat your oven to 200 degrees Celsius
In a bowl, whisk together the peanut butter, sugar, coconut oil and almond milk until its creamy and smooth
In a separate bowl, stir together flour, oats, baking soda, cinnamon and salt
Add the wet ingredients into the dry and stir until well combined
Roll the mixture into 10-15 even sized balls and place them on a greased baking tray
Press down gently with the back of a spoon and place in the oven
Bake for 8-10 minutes then remove from oven
Allow to cool then store in an airtight container
These cookies are just delicious as they are, but if you’ve had a particularly rough day, you might want to melt some vegan dark chocolate and cover them in that. This is as close to perfection as you can get in a cookie!
