Ever since I got my super cheap, second-hand ice cream maker a couple of months ago, it’s been my favourite thing to whip up a batch of ice cream and play around with the flavours. It’s so easy to make vegan ice cream, and most of the time, I even make it sugar free; thanks to the sweetness and fattiness of the coconut milk, you can’t even tell the difference.
For this recipe, though, I figured that with the coffee and the milk and the creamy fat of the coconut, what we were really making was a solid version of a frappe, and no frappe is perfect without a little sugar. Plus it’s the holidays, the season of gluttony, so I figured, why not?
Against all my better judgement, being something of a coffee snob, I’m going to say something I thought I’d never say: For this, crappy cheap instant coffee is best. In fact, using the good stuff won’t work at all; you need that over-roasted, dark taste to make this ice cream. But never buy that crappy stuff apart from to make ice cream (and my Grandma’s coffee cake, when I finally get that recipe!)
With a bit of waiting, this recipe is a super easy one. And it’s absolutely delicious.
(Makes one medium tub)
3 cans full-fat coconut milk
1 tbsp instant coffee
1/2 cup icing sugar (powdered sugar)
Scoop out the fatty, creamy bit from the top of your coconut milk cans (tip: putting them in the fridge for a few hours helps the fat to separate)
Place the creamy stuff, the sugar and the instant coffee into a pan and stir gently over a low heat until everything has mixed together
Stir over a medium heat for another 5-10 minutes, and allow to cool
Transfer to a container and place in the fridge until absolutely cooled
Put the mixture into your ice cream maker and churn according to the machine’s instructions
When the churning is done, put the ice cream in a freezer-safe container and freeze
This recipe turned out super creamy and delicious, and though it’s really simple, it definitely packs a punch in the flavour department!
You can top with chocolate sauce for a mocha taste if you’re a true renegade. Ice cream in December? So sue me!
