It’s a truth, universally acknowledged, that Butter Pecan is the best of the ice cream flavours. I mean, there’s a pretty stellar top ten including things like Mint Choc Chip and Vanilla Bean, but only about 1% of the population will ever turn down Butter Pecan. It’s like a hug for your tummy.
Unfortunately, Butter Pecan isn’t exactly vegan friendly. It’s rare to find a vegan Butter Pecan Ice Cream, and when you do, it doesn’t tend to be all that good.
Well, thankfully, this recipe is as ridiculously delicious as the real thing. Vegan butter (something like Earth Balance) takes the place of real butter, and I like to use a combination of oat and almond milks for this recipe, so as to get the correct milky consistency; I usually use coconut milk in my ice cream, but for some reason, I just didn’t think that was right for this recipe.
Despite a long wait while the milk mixture cools, this is actually a pretty easy recipe. And did I mention that it’s totally scrumptious?
(Makes 1 very large tub)
1/2 teaspoon cinnamon
1/4 teaspoon ginger
2 cups pecans
1 1/2 tbsp vegan butter + 3 tbsps reserve
3 cups almond milk
3 cups oat milk
1/2 cup turbinado sugar
1 tablespoon vanilla
2 tbsp rum
pinch of salt
Heat a frying pan, and melt the 1 1/2 tbsp vegan butter in it
Add in the pecans and spices, and toast until a touch browned. Remove from the heat
In a large pan, combine the almond milk, oat milk, sugar, vanilla, rum, salt and the remaining 3 tbsps of vegan butter and cook over a medium heat for 10 minutes, stirring often
Place this mixture in the fridge to cool for 1 hour, or until totally cold
Place into a blender with 1/3 pecans and pulse for a few seconds
Place the ice cream mixture into your ice cream machine and churn for 15 minutes
Add in the remaining pecan mixture and churn for 5 more minutes
Store in tupperware and freeze
Allow to chill for a few minutes before scooping!
Pecans are the kings of nuts, so obviously this is a completely decadent little bowlful of deliciousness. The rum in this recipe stops the mixture from freezing too solid, so be sure not to leave it out; it’s important!
