As you’ve probably read before on this blog, I am just no good at cookies.
Cakes, yes. Cupcakes, absolutely. A good salad with a kick-ass dressing? You better believe it.
However, something about cookies just bewilders me. So when they turn out incredible, like these, it makes it all the more surprising to me.
Putin and I were craving something sweet the other day, and I had half a pomegranate that I needed to use up – and poof! These little nuggets of delight were born.
They’re simple, quick and oh so sweet, so enjoy them with a cup of hot tea and a cuddle.
(Makes 12 cookies)
1 1/4 cups flour
1 1/4 cups rolled oats
1 teaspoon baking powder
1/2 teaspoon baking soda
pinch of salt
1/2 cup sugar
1 tablespoon agave nectar / maple syrup
3/4 cup Earth Balance / vegan margarine
1 teaspoon vanilla extract
3/4 cup pomegranate seeds
Preheat the oven to 175 degrees Celsius and grease a baking tray
In a mixing bowl, sift together the flour, baking powder, baking soda, sugar and salt, and stir in the rolled oats
In a smaller bowl, cream together the Earth Balance / vegan margarine with the agave nectar / maple syrup and the vanilla extract
Stir the wet ingredients into the dry until just combined
Gently stir in the pomegranate seeds until evenly dispersed
Split the dough into 12 portions and roll each one into a ball
Place onto the baking tray, squish each ball a little and bake for 12 minutes
Allow to cool and then serve!
That’s it! They really are that simple – in fact, they’d be great to make with kids, especially if your nephews are as cute as mine!
