Croquettes are very homely for me; they always seemed to be in the freezer in my Mum’s house, but I didn’t even consider making them until yesterday!
This is a variation on a BBC food recipe which, of course, has been veganized. These are filing, delicious and healthier than normal croquettes – and they’re gluten-free!
(makes 15 large croquettes)
2 cups sweet potato, cooked and mashed
1 1/2 cups green lentils, cooked and drained
1 tbsp oregano
a pinch of salt
flour (any, but make sure its GF if you are!)
oil for frying
Mash or blend together the sweet potato and 1 cup of the lentils
Stir in the remaining lentils, oregano and salt
Place the mixture in the fridge for 30 minutes, then remove and form into 15-20 medium or small cylinders
Dredge each one through the (GF) flour, then the vinegar, then the ground flax
Heat a few inches of oil in a small pan until very hot
Place 3-4 croquettes into the oil and fry for a few minutes until done
Remove from the oil with a slotted spoon then place on kitchen paper to dry out
Serve topped with a tomato sauce with steamed veggies and greens!
