Although I will probably never be a raw vegan, I really enjoying eating raw food. Raw dishes seem to be uber-packed with energy and goodness, and they always help to boost me up throughout my day.
Parfaits, as well, will always be my favourite things. Ever. I love cutting through a crunchy later to get to a creamy layer, and I love that having a parfait is basically like having your cake and eating it too: you can have EVERYTHING that you like in it. Like this one!
Much like a strawberry shortcake but a lot healthier, this breakfast parfait tastes sweet but is sugar-free, contains no gluten, and is all natural and raw. And it takes about 5 minutes to make if you already have some coconut milk in the fridge!
You’ll need:
(Makes 4)
1 1/2 cups almonds
1/2 cup grated coconut
2 tablespoons coconut oil
1/4 cup ground flax
4 dates
a pinch of cinnamon
1 punnet of fresh, ripe strawberries, sliced thick
1 can coconut milk
Method:
[24 hours before you want to make this, place your can of coconut milk into the very back of your fridge; the coldest part
The morning after, take the can out of the fridge and open it up. The milk will have separated into the cream at the top and the water below]
Scoop out the coconut cream from the top of the can, being careful not to take any of the water with it
Place the cream into a bowl and whip it lightly; it doesn’t need much at all. Place it back into the fridge
In a food processor, blend together the almonds, grated coconut, flax, dates, coconut oil and cinnamon for a few seconds
Take 4 fat glasses and sprinkle some of the almond mixture in the bottom, then a layer of strawberries, then some coconut cream
Continue layering like this until everything is gone. Serve with a strawberry on top and a sprinkle of cinnamon
Enjoy!
Although this could easily be a dessert as well as a breakfast, it is in fact super healthy; the fats from the nuts and the coconut cream will help to keep you as healthy as you can be as well as giving you energy, and the strawberries are not only delicious but are good for you too.
This is one of my favourite post-workout treats too; the fats are even more essential if you’ve been pumping iron!
