I read a little while ago that strawberries and tomatoes are pretty much interchangeable in most recipes, and I didn’t believe it was true. Or, rather, I did kinda believe it but I was too gutless to try making pasta sauce with strawberries and ending up with egg on my face (if you’ll pardon the pun).
After finding out that strawberries also pair really well with coriander, though, I knew that I’d got my first strawberries-in-place-of-tomatoes recipe.
This salsa is incredibly light and fresher than normal salsa, and it has the added benefit of feeling a bit like a dessert. It’s certainly not out of place next to vegan tacos on a plate, though, and I would pair this with pretty much anything like that. We had it with quinoa salad and also with the aforementioned tacos and avocado and I am pretty much in love with it. Super easy too!
You’ll need:
(Feeds 4 as a side)
1/2 onion, diced
1/2 red pepper, diced
2 cups strawberries, diced
2 green chilis, diced
1/2 cup coriander (cilantro), roughly chopped
2 tbsp fresh lime juice
Method:
Mix everything together in a bowl and serve
You can also add 1 tbsp fresh orange juice if you feel you’ll like to bring the tartness up a little, although I think it’s perfect without
Getting lots of vitamin C in your diet is essential for helping your body absorb that much-needed iron, so this is a gerat thing to throw into your repertoire.
