I am pretty certain that everyone in the world loves bean burgers. Even the heartiest meat eater can have their head turned by a juicy bean patty, which means they’re fantastic for BBQs or parties if your non-veggie friends are coming over.
I first made these bean patties a couple of years ago for a BBQ we were having – though the eternal curse of having it rain on every party I throw means that they got cooked in the oven in the end. I have adjusted the recipe this time, with fantastic results!
The cashews here aren’t absolutely necessary but I love the texture they give to the burgers. I know they’re expensive, though, so if you don’t have them, don’t worry-they’re perfect without!
1 tin of kidney beans, drained
1 small red onion, chopped finely
1 tsp ginger, grated
3 tbsp breadcrumbs
2 tbsp plain flour and more for the outside of the patties
1/2 a small red chili
1/2 tsp of cumin
a pinch of cayenne pepper
a splash of soy sauce
juice of 1 lime
a handful of fresh coriander
(optional) 1/2 cup cashews, roughly chopped
Mash the kidney beans with a fork until they’re somewhat pureed
Add the red onion, grate in the ginger, and add the soy sauce
Add the chili, spices and half the lime juice
Add the breadcrumbs and mix well
Add the flour a bit at a time; if it becomes too dry, add more soy sauce
Chop the coriander and add this, mixing thoroughly
If using, stir in the cashews
Shape into 6 patties and cover with flour
Set in the fridge for 10 minutes at least
Heat some oil in a frying pan
When hot, add the patties and fry on a medium-high heat for about 4 minutes on both sides, or until each side is brown and they’re warm in the middle
Serve, and drizzle with sweet chilli sauce, if that’s your bag (it most definitely is mine)
I like to lose the traditional bread and serve these with couscous, grilled zucchini and a salad which makes this meal feel very light while being nutritionally dense.
However, with a few sauces and some lettuce on a good quality ciabatta, this can be an incredible burger that would stand up against any meaty offering. The choice is yours!
