Amazing things happen when you buy a food processor. Mainly, a lot of raw vegan amazing things.
I finally made the much-needed jump this week when I almost had a blender-induced breakdown from trying to make raw chocolate avocado pudding. I don’t know why I’ve been putting it off so long; best $50 I’ve ever spent (and it’s an 8-cupper!).
It also means that now, I can make healthy things early in the morning and not worry about not having enough time. This Raw Vegan Tropical Fruit Crumble is something that you can very easily make for after dinner for yourself or for guests, and if you want to make it more visually appealing for a dessert, just double or triple the recipe and place it in a casserole dish like you normally would for a crumble. The possibilities are endless.
1 cup almonds
1/2 cup walnuts
3 tbsp coconut oil
1/2 cup raisins / dates
1 teaspoon cinnamon
1/4 cup ground flax
3 cups chopped pineapple
4 cups chopped watermelon / papaya
3 cups chopped mango
Chop the fruit into bite-sized chunks and place in the middle of a plate
Blend together the almonds, walnuts, coconut oil, raisins/dates, cinnamon and ground flax together in a food processor until the mixture resembles a crumble
Pour the ‘crumble’ on top of the fruit and serve! It’s that easy!
This is literally a 5 minute meal, and it’s so delicious and healthy that I struggle not to make it every day. You could use macadamias in place of the walnuts if you prefer, but I think the walnuts bring a really fantastic texture to the mixture.
You’ll noticed that I tagged this recipe as breakfast; yep, I meant to do it! This is a great thing to finish off a breakfast with friends or even as something to eat before you scoot off to work. It’s healthy, fresh, full of goodness and won’t weigh you down while you run for that bus. Perfect!
