With only a couple of weeks left in the same city as my beloved Bikram Yoga Centre, I’m going quite a lot (like 3-4 times a week), and with the sun out in Toronto I’m firmly back on my bike. This means that my meals need to give me a lot of energy and some get-up-and-go in the morning – and there’s nothing better for that than oatmeal.
Peanut butter is a great source of protein to rebuild working muscles and though it feels like a treat, it’s actually great for you if you use the real stuff, not that Kraft rubbish!
If you struggle to get your kids eating healthy meals in the morning, this is a fantastic solution. Every kid loves peanut butter and jam sandwiches, and this is only a few small steps away from that. At least that’s what I would tell my kid!
It also takes 5 minutes to make – leaving the rest of the morning for you to try and get them to put their shoes on.
2 cups rolled oats (make sure they’re gluten-free if you are making a gluten-free dish)
2 cups almond milk
2 tbsp 100%, natural peanut butter
2 tbsp raspberries
Agave nectar / honey
Blend the oats in a blender for a few seconds then place into a pan
Heat the oats and almond milk in a pan for 5 minutes, until it reaches the desired consistency
Remove from the heat and stir in the peanut butter (and a splash more almond milk, if you like)
Scatter the raspberries on top and drizzle with agave nectar or honey if you’re not vegan
If you’re making this for your kids, I wholly recommend blending the oats before using, so that they’re the same consistency as Ready Brek, and perhaps mushing half the oats into the oatmeal to even out the sweetness and make it look a cool red colour. This is an amazing breakfast for kids particularly, and it’s much better than those horribly sugary breakfast cereals that will have them bouncing off the walls from morning time!
This isn’t just a breakfast for kids though; I love it!
