As I mentioned on my Facebook page, Putin and I were unfortunate enough to sample probably the worst of Pizzaiolo’s vegan pizza offerings on Tuesday night. We were on a bit of a high from watching the Avengers (for $5!) and being pleasantly surprised by it, and we topped off the night with a slice each of a crappy glorified garlic bread covered in crispy potato slices. A pizza, that is not.
This left me with a need to eat some tasty pizza – and coincidentally, I had some tortillas that needed to be used up. Hey presto, a great vegan pizza that’s so easy to make it seems almost wrong.
This is a dinner that can be made in less than half an hour, and it will please all your family. It’s a great dish to make with your kids as they can help assemble the pizza and will love the way it tastes.
(Feeds 2, or 4 along with a salad)
1/2 onion, diced
2 cloves garlic, minced
1 cup diced tomatoes
1 tsp tomato puree
1/2 tsp paprika
1 tbsp red wine
1 zucchini, thinly sliced
3 cups mushrooms, chopped
2-3 handfuls spinach, torn
4 tortilla wraps
good quality oil
Heat a little oil in a pan, and saute the onion and garlic until translucent
Add in the diced tomatoes, paprika, tomato puree and red wine, and stir to combine
Reduce the sauce over a medium heat for 5-10 minutes, or until it is less watery
Preheat the oven to 180 degrees Celsius
Place two tortillas together to create the crust, and spoon 1/2 the sauce on top of it, spreading it right to the edges
Top with half the zucchini slices, mushrooms and spinach, and drizzle with hot sauce
Repeat for the rest of the ingredients, making 2 pizzas
Bake in the oven for 15 minutes, or until the vegetables are softened and cooked through
Cut in half if serving to 4, and serve with a large garden salad. If serving to two, slice and serve!
This is an almost perfect meal for a busy summer night: tasty, easy to make, filling and delicious. You can customize this recipe to include almost any topping you like: caramelised onions and balsamic-sauteed red peppers are my particular favourites.
