Yesterday, I posted up a recipe for my Jerk Seasoning Paste with a promise that I’d also post up a recipe for you to use it in. And here it is!
These are some truly awesome tacos; protein-filled and easy to make in less than 15 minutes. Kids who like spice would love these, and if you want to make them less hot, you can use less Jerk paste – or more, if you’re super keen!

For the tacos:
2 cups TVP
1 3/4 cups water
1 onion, diced
1 red pepper, diced
1 yellow pepper, diced
1 green pepper, diced
8 soft tacos
a little oil
2-3 tablespoons Jerk Seasoning Paste
For the salsa:
1 mango, diced
1/2 red onion, diced
1 chili, minced
juice of 1 lime
dash of hot sauce
Place the TVP in a bowl with the water and stir. Leave it for 5 minutes to rehydrate
In a frying pan, heat a little oil
When the oil is medium hot, add in the Jerk Seasoning Paste and stir until fragrant
Add in the onion and cook until translucent (about 3-4 minutes)
Add in the TVP and the three peppers, and cook over a medium heat until the peppers are soft
While this is cooking, in a separate bowl stir together the diced mango, red onion, chili, lime juice, hot sauce, salt and pepper. Set this aside for while the tacos finish
In a clean frying pan, heat the tacos until they begin to pop up a little, then turn them over and do the same. This should take a few seconds each time
Load each taco with the TVP mixture and then the salsa. 2 tacos for each person is just about perfect.
You could top these with any kind of fruit salsa you like, but mango and pineapple are my favourites; they bring a sense of the Caribbean and they take down the heat of the Jerk TVP a little. These tacos will also look great – and, as we all know, the first bite is with the eye!
