Ok, this is barely a recipe. Seriously. Let’s not pretend I’m being Nigella here. I’m sure that you all know how to make home fries, but I couldn’t resist sharing this uber-delicious take on everyone’s favourite hangover breakfast.
I have been craving home fries since we left the US 3 weeks ago, and haven’t really found a provider in Panama City. Since this week I had my first Breakfast With Friends at my new apartment, I made such a massive stack of home fries that it was still feeding us this morning. This recipe is definitely a new one of the menu from now on!
(Feeds 2 or 3 as part of a breakfast / brunch)
1 large white potato
1/2 onion, sliced thinly
2 cloves garlic, crushed
a little olive oil
Wash the potato but don’t peel it
Cut it into 1-inch chunks
Heat the oil in a frying pan, and toss in the garlic and onion
Fry for 3-4 minutes until browning, then add in a little more oil and the potatoes
Cook on a medium heat for 15-20 minutes, stirring very often
When the potatoes are getting tender, add sauce hot sauce to the pan. You can tailor the amount to your own tastes, but I find that 2 tablespoons of hot sauce is perfect for me
Allow some of the potatoes to brown, to give them that rustic look
Continue to cook until the potatoes are all perfectly tender, and have a crunchy outer coating
Serve with some home-made ketchup, a salad and something delicious like a carrot and coriander patty!
