One of the best things about living with a personal trainer and nutritionist is that not only will they force you to get up and work out when you’re feeling less than sprightly, but they can also tell you what best to eat to give you energy and get your muscles recovering!
With that in mind, my household has gone a bit mad on nuts lately; peanut butter to be specific. A spoonful before a morning workout; a PB smoothie after, and now, even the PB nut clusters as treats throughout the day!
Nuts are a great source of ….well, a whole bunch of stuff! Studies have shown that people who regularly include nuts or peanut butter in their diets are less likely to develop heart disease or type 2 diabetes than those who rarely eat nuts. AND they’re delicious!
These clusters and quick and easy to make, and kids will love them. The big kids in our house certainly do.
(Makes 1 batch)
1/3 cup maple syrup / agave (you can use honey if you aren’t vegan)
2 tablespoons coconut oil
1 tablespoon 100& peanut butter
1 1/2 cups walnuts
1 1/2 cup sliced almonds
3 tablespoons ground flax
1/2 teaspoon cinnamon
a pinch of salt
Preheat your oven to 200 degrees Celsiu
Pour the maple syrup / agave, coconut oil and peanut butter into a pan
Stir together over a low heat until just combined
Add the walnuts (slightly broken), almonds, flax, cinnamon and salt to the pan, and stir to coat
Press the mixture into an 8×8 in baking tray that’s been greased well
Bake in the oven for 25-30 minutes
Remove from the oven and allow to totally cool
Break up into pieces and enjoy!
The flax in this brings some extra nutrition to these, and you can snack on these all day long without feeling the least bit guilty. Hooray!
