Raw vegan treats. Seriously, just the best. They all take about 5 minutes to make, they’re all incredibly filling and they contain so much goodness that you can’t feel guilty if you try.
I have already made these several times this week, and with a house of 4 of us at the moment, they’re gone in about 5 minutes. Paleo-friendly if you use maple syrup (as I’m hosting paleo people right now), gluten-free and sugar-free too, these are sinful enough to feel decadent and healthy enough to fill that sweet craving, they might just be perfect.
1 1/2 cups raw almonds
1/2 cup walnuts
1/3 cup grated raw cacao
2 tablespoons coconut oil + 2 tablespoons reserve
1 tablespoon coconut milk
3 tablespoons ground flax
1/3 cup grated fresh coconut + 1/3 cup reserve
1-2 tablespoons agave nectar / maple syrup
Place the almonds into a food processor and blend til they look like fine breadcrumbs
Add in the cacao, flax, grated coconut and blend some more
Add in the coconut oil, coconut milk and half the sweetener, and blend until mixed
Taste and add the additional sweetener if necessary (to your taste)
Roll into 8-10 separate balls, then roll in reserve coconut oil and reserve fresh coconut to coat in coconut
Keep in the fridge until time to serve, then enjoy!
These will literally be ready in 5 minutes from when you have the idea to make them. If you have impromptu friend visits or a mad craving, these are a great choice. They look fancy, they taste great and everyone loves them.
What I’m saying is this: go mad on these!
