Mondays and Tuesdays in our house are filled with meals that use up everything left over in the fridge. We go to the mercado on Tuesdays most of the time, so by the time that trip rolls around on Tuesday morning I want the fridge to be pretty much empty; I hate throwing food away and we have got pretty good at buying exactly the right amount for a week. However, there are always a few stragglers that didn’t get used in the previous 7 days – and this week, it was broccoli.
We usually go through broccoli like its going out of fashion, but for some reason this week I had a whole 4 heads left and no idea what to do with them. Thankfully, they were sitting next to a container full of freshly-cooked chickpeas, and so this unholy union was born!
I say unholy; actually, it’s pretty damn healthy. I steamed the broccoli to keep as many nutrients as possible, and the chickpeas bring a nice dose of protein. For such a simple meal this is packed with flavour, and although I don’t usually use a lot of faux-cheese products, I had some veggie parmesan left over and it was a great addition to the pot!
4 cups broccoli, chopped
2 tablespoons olive oil
1 onion, diced
3 garlic cloves, smashed
2 cups chickpeas, pre-cooked or canned
3 cups vegetable stock
2 tablespoons vegan Parmesan (or the real stuff if you’re not vegan!)
Lots of salt and pepper to taste
Steam the broccoli over a high heat until it’s bright green and tender; about 5 minutes or a couple more
In a large pan, heat the oil and toss in the onion and garlic
When the garlic is translucent, add in the chickpeas and veggie stock
Cook for about 5 minutes and then take off the heat; allow to cool.
Add the broccoli and vegan Parmesan to the mixture then puree, in batches, in a food processor
Season with salt and pepper then re-heat gently in a large pan
This is the perfect kind of soup for a rainy Autumn evening, or for a light lunch at work! You can also leave the soup as it is without pureeing, but I much prefer the creamy texture. I do, however, leave a few florets and chickpeas in just for shiggles!
