As I’m back home in the motherland, it seems only right that I should be baking some British classics – albeit with a bit of a twist!
Flapjack is, for me, a reminder of home. My mum makes the best flapjack in the world (IN THE WORLD I tell you!) and there’s always a cake tin full of it whenever anyone’s coming over. It’s all butter, sugar and golden syrup usually, although she has taken to making a vegan version because Putin and I love it so much (thanks, Mum!).
However, you know me. I can’t leave anything alone; everything needs to be spiced up a little! I’m currently in Edinburgh housesitting for my newlywed friends, and I noticed that I still had some almond butter and coconut butter left over in the fridge. These two seemed to be the perfect companion for oats and a little sweetener – and why not throw in the rest of the cherries that are sitting in the fruit bowl?
These flapjacks are very easy to make and have a lot more nutritional value than your everyday sugary flapjacks – although I won’t go as far as to say that they’re entirely healthy, as they still have the sweetener in them. However, you shouldn’t feel too bad about treating yourself, especially if you’re doing a hike or a bike ride and need the energy!
(Makes 10-12 flapjacks)
1/2 cup coconut butter
1 headed tablespoon 100% almond butter
1/2 cup coconut or almond oil
2 tablespoons agave, maple syrup or treacle
2 1/2 cups rolled oats
2 handfuls fresh ripe cherries, chopped roughly
Preheat your oven to 175 degrees Celsius and grease an 8×8-inch baking pan with oil
In a saucepan, melt together the coconut butter and almond butter over a low heat
Stir in the coconut or almond oil and the sweetener. Mix well
Remove from the heat and stir in the rolled oats, mixing well
Stir in the cherries then press the whole thing into the greased baking pan
Bake for 20 minutes then allow to cool
Cut into pieces and serve!
These keep beautifully for a week in a tin, but make sure it’s properly closed. There’s no way in hell that these will last a week though. They’re heavenly!
