$2 Meal Week day 1: Banana Apple Oatmeal Bars

Breakfast: 2 Banana Apple Oatmeal Bars with oolong tea

Lunch: Barley stew

Dinner: Green tea soup

Today, I realised what it means to “mature”; when I was a kid, I would spring out of bed to watch the Raccoons or to annoy my parents. Now I’m 25, I spring out of bed to get stuck into a cooking challenge – to live and eat on just $2 A Day.

In case you missed yesterday’s post, this week I’m supporting fantastic Ugandan charity Codewe by taking part in their $2 A Day Challenge. This is the amount of money that 65% of Ugandans have to feed themselves on per day, and by challenging others to do the same, Codewe hope to raise both money and awareness to help this situation.

Unlike many in Uganda, I have the privilege of shopping around for my food and making meals in bulk, so having got my little cooking stash yesterday, I decided to make 3 days’ worth of breakfasts today.

These bars could not be simpler (just 3 ingredients!) but are shockingly delicious and absolutely packed full of energy, which is especially good when spring has come early, as it has in Toronto. I need the extra kick to ride my bike to work now!

You’ll need:
(Makes 6 bars)
2 cups large flake porridge oats
2 large ripe bananas
1 apple
water

Method:
Preheat the oven to 180 degrees Celsius
Soak the oats in water for about 15 minutes before use, then drain in a seive
Blend 1 cup of the porridge oats until they’re about half as fine as they were originally
Set these aside and blend the 2 bananas until they’re a creamy paste
Mix together the bananas and all the oats
Chop the apple into very small chunks and mix into the oats and banana
Lightly grease a loaf tin with oil and then spread the mixture evenly into it
Press down firmly all over
Bake for 20 minutes then allow to cool
Cut into 6 bars and store in an airtight container

Cost of recipe: $1.19
Cost of 1 bar: 20 cents

Maybe I’m just hungrier than your average gal, but I find that about 2 of these are sufficient to get me up in the morning, along with a cup of oolong tea. Oats are a great source of slow release energy, so these should not only get me to work but should see me coast through to lunchtime without even remembering that I have a stomach!

    Pumpkin seeds and cranberries – what a stroke of genius!! I am DEFINITELY going to try that, especially if you can even tempt Mia into it! Nice work Harri!

    I made these again last night, with slightly smaller bananas, having forgotten to soak the oats, and with added pumpkin seeds and dried cranberries. They’re excellent, and I may even manage to convince Amelia to try one this time.
