Brunch: Hot sauce home fries, sweet potato and spinach ‘cakes’, jerk eggplant bacon, green salad, toasted ‘everything’ bagels, fresh orange juice and coffee
Dinner: Spinach, chickpea and eggplant curry followed by Almond Milk Frappes
I don’t know if I’ve mentioned, but it’s pretty hot here in Panama. Espresso drinks aren’t all that popular, and if they are, it’s tough to get them made vegan. I only really know of one place that has soy milk, and you definitely have to ask.
And so, behold: a vegan coffee drink that’s easy to make at home. The best ideas come through necessity…and I definitely needed this this week.
1 cup strong black coffee
2 tablespoons brown sugar
1 cup almond milk, unsweetened preferably
1 teaspoon cinnamon
a little ice
Pour the black coffee into ice cube moulds and refrigerate until solid
Put the ice cubes, sugar, almond milk, cinnamon and a few cubes of regular ice into a blender
Blend, blend, blend!
Pour into glasses and sprinkle with a little more cinnamon – and, if you want to be fancy, drizzle a little chocolate sauce on top
As with all coffee drinks, you should avoid having too many of these in one day; nobody likes getting the jitters! I highly recommend using the best coffee you have; Peruvian coffee works great, as does Cafe Duran from here in Panama. Choose your favourite!
