Jerk Eggplant “Bacon”

Breakfast: Sweet Potato Cakes with black beans and eggplant bacon

Lunch: Roasted vegetable panini and salad

Dinner: Fresh spring rolls and sprouted quinoa, beet and chickpea salad

One of the things I get asked most often when people find out that I don’t eat meat (after “where do you get your protein from?” and “what about cheese?”) is “OH MY GOD, don’t you miss bacon?”

The answer to that questions is no, as I wasn’t really that into it in the first place, and also after a few months of not eating meat your food desires really change. However, I know that a lot of vegetarians do miss that hangover breakfast and the sizzling, fatty bacon that comes with it.

Don’t fear, bacon-lovers! Jerk Eggplant Bacon is here!

One of the great things about this eggplant bacon is that it sizzles in the pan like bacon and almost even smells like the real thing too. It’s a great addition to a hungover vegan breakfast and the jerk seasoning helps to bring that smoky flavour you get form real bacon. Even I love this!

You’ll need:
(Feeds 2 as part of a breakfast)
1 eggplant
1 tsp jerk seasoning – make sure it’s vegan!
a little oil

Method:
Cut the eggplant in half long-wise and slice it as thinly as possible
Put the thin slices in a bowl and stir the jerk seasoning around so it covers the slices evenly
Heat a little oil in a frying pan and place the eggplant slices in it; you might have to use 2 frying pans or cook these in shifts!
Fry the eggplant for 3-4 minutes on each side, until it’s browning a little
You can eat it right now, or if you prefer it crispy, keep cooking and turning until it’s your desired texture

You can make an alternative Full English with this if you like; beans, toast, some spinach, veggie sausage – the works! Great if you went a little overboard the night before and are craving the old days of greasy breakfasts.

    So glad you like this Tom! It did alert me to the fact that I haven’t made this for Putin yet, though. So guess what I’m making tomorrow!
