We’ve all been there: you wake up, determined to have some oatmeal, and there’s no milk. Oatmeal made with water (let’s call it The Hardcore Scottish Way) never seems as appealing. Bummer.
Well, let this be a problem no more. This recipe (for Codewe’s $2 A Day challenge) uses no milk substitute, but the blended / mashed banana gives it an amazingly creamy consistency as well as a strong flavour that goes delightfully with the steamed apple.
I recently heard of the concept of steaming apples, and I have to say, I loved it! Just make sure that you don’t over steam and make your apple slices mushy. And if you don’t have a steamer, you can easily use a sieve on top of a pan of boiling water.
1 cup oats (I prefer the fine oats)
2 cups water
1 apple, cut into slices
Set the apple slices in a steamer over a pan of simmering water and steam for 5-10 minutes
Take them off the steamer at your preferred consistency
Put the oats and water in a pan on a medium heat and cook until the water has disappeared
While this is happening, either mash or blend your banana
Add the almost-liquified banana to the oatmeal, mix thoroughly, then set the apple slices on top and serve
This is a very, very filling breakfast and a great one to choose if you’re cycling or running to work as it’s got great slow release energy!
If you have any shredded coconut around, this would also go brilliantly in this breakfast, with some agave nectar drizzled on top.
