I think I’ve cracked this budget thing: dried beans.
You can get about a houseful of dried kidney beans for about 20 cents at the moment, and all you need to do is soak them for 8-12 hours, cook them for 1 hour, then keep them in your fridge or freezer for when you want to use them again. They are that easy.
This is a great lunch or even dinner, and the beans bring a good dose of protein.
1 medium sweet potato
1/2 an onion
1/2 a cup canned tomatoes
1 cup pre-soaked and cooked (or canned) kidney beans
1/2 bunch spinach
Preheat the oven to 200 degrees Celsius
Prick the sweet potato all over with a fork, then place in the oven for 60 minutes
After an hour, place the onion in a pan and fry in a little oil until brown
Add in the tomatoes and beans, and cook for 10 minutes
Take the potato from the oven, check it’s cooked through, then layer ripped spinach and the bean mixture on top

I forgot how much I absolutely LOVE sweet potatoes, and the taste makes this meal feel a lot more decadent than it is.
